Korean Bulgogi Beef, made with a spicy blend of gochujang, ginger, garlic, spices, and soy sauce, is marinated, grilled, and stuffed into a light, fluffy, and slightly sweet steamed buns. Freshly shredded carrot, sprigs of cilantro, slices of pickled burdock (or radish), and pickled cucumbers rounds are added to the sandwich to lighten and freshen it up. And as for the kewpie mayo, well that creamy Japenese goodness is smeared on the inside of the steamed buns to help it all stay together. And trust me, if you're mouth isn't watering, go ahead and re-read the first few sentences. See what I mean? Ok, it's time for you to try this.

Ingredients

  • 3 steamed buns
  • 1/2 lb. thinly sliced beef
  • 1/2 cup bulgogi marinade
  • 1/4 cup shredded carrots
  • 6 quick pickles
  • 6 slices pickled burdock root or radish
  • a few sprigs cilantro

Steps to Make It

  1. Let the beef marinate in the bulgogi marinade for at least 2 hours.

  2. Once they've soaked, heat up a grill to medium-high heat and cook the beef for a few minutes until it's charred on the outside.

  3. Remove from heat and set aside.

  4. Prepared the steamed buns according to the directions.

  5. Remove buns from the steamer, carefully open them up and equally distribute the cooked beef, kewpie mayo, shredded carrots, pickled cucumbers, pickled burdock root, cilantro and sriracha if desired.

  6. Serve immediately.
